How Is Womans Vergina

Crepes with radicchio and gorgonzola pasta



The crepes are a resource that sometimes I forget ... but are really good and versatile. With the same recipe can be used both sweet and savory, with a first, second, a cake, a dessert! And alone, they are still tasty. This dish did my mom, the recipe had been found in a magazine, and she never tired of trying new things. Like all his dishes, if she liked, over time they became more personalized and rich! This is the base version:

Ingredients:

for crepes:

200 g flour 2 eggs 400 ml milk

50 ml of sparkling wine or dry white wine 2 tablespoons melted butter



a pinch of salt for the filling: 3 shallots

radicchio
600 g 150 g gorgonzola


extra virgin olive oil to taste for the white sauce: 40 g

butter 30g flour 400 ml milk

salt, pepper, nutmeg

a sprinkling of Parmesan.

Make a batter with the milk Mix the flour, add eggs, wine, and then the melted butter.
Season with a pinch of salt.
Heat very well in a pan 20/22 cm by anointing them with a bit of butter only the first time. Pour
a ladle of batter and quickly rotate the pan to distribute it well (I have not attached the contraption to make pancakes, but even so is fine). As soon as the edges become brown and fall off, leaving her to take it and turn it a minute to brown the other side. Continue this until all the batter.



Wash the radicchio and cut into thin strips. Fry the shallots in a pan with two tablespoons of olive oil, add the radicchio, waiting to wilt and dry and then add the Gorgonzola into small pieces. Season with salt. Make the sauce: melt butter, add flour and toast, stirring very well just turns slightly, add the milk little by little making sure that no lumps are formed.
With these doses, the sauce is fairly thick. Turn off the heat and add the cream radicchio.Alla end will be a violet!

Put a little cream over each crepe and close to four. Place in a greased pan with some butter, overlapping with each other. When done, sprinkle with Parmesan and distribute some butter. (As I like the knobs of butter, I really like the word ... knobs of butter!)

Bake at 180 degrees for half an hour, or until they are golden. Bon Apetit!
