But that is cold today ?!... I'm getting a cold ..... and when they are so, I will always want some food you pampering ! Fragrant, warm and tasty. I make this soup for years, is buooooona, easy quick and easy. Of course it is so simple that it must necessarily have quality ingredients: the more good will be, will be more good soup!
It 's really the ideal place to warm up the body ... and heart ;-)

Ingredients for 4:

vegetable broth

Parmesan cheese 2 eggs 2

8 slices of mozzarella bread

Make a vegetable broth, if possible, with homemade nut (three teaspoons). Lightly beat eggs and add two good handfuls of Parmesan cheese (mine was taken today in Parma in a company that does it wonderfully). Meanwhile, to toast the bread slices under broiler or on the plate. Place them in individual plates and top slicing cubes or thin slices of mozzarella (that's good, really, if it seems no gum!). When the broth boils, turn off the heat and add the eggs with the cheese, stirring quickly.
Pour the boiling broth over the slices topped with mozzarella, give a good sprinkling of pepper and serve immediately.
