Tribute to Sigrid: soft pizza dough with potato

Dai .. do a little respite with the sweet!
soon as I saw the "buns of the South" by Sigrid ( are here ) I fell in love ... I just made a little 'custom as usual, but you know ... the beauty is too! I guarantee that the whole family has greatly appreciated .. and even a boyfriend, that if they have not electrocuted a few freshly baked ... .. hot .. mmmm!
Here they are:
for about 20 muffins
flour 350g

potato starch 150g potatoes 200g fresh yeast 25g

water 150 cc ABOUT
oil 'oil 2 and 1 / 2 tablespoons
teaspoon salt 1 large
oregano to taste

for seasoning
olives a handful
red onion 1 / 2
capers 2 tablespoons
semi-hard cheese cubes 2
for pizza tomato sauce 1 teaspoon per pizza
semi-dried tomatoes in oil


I unfortunately have not yet provided planet, despite the constant pleas to various relatives to put it between the hypothetical Christmas gifts ....;) then, by hand!
Dissolve yeast in warm water cube (with a pinch of sugar). Put flour and starch (it was not planned, but I wanted a smooth soft dough ...) in a container with oil, salt and potatoes previously cooked and mashed. Gradually add water and yeast, adjusted as necessary with water or flour to adjust consistency, and knead for 10 minutes. Come on ....
Let rise for an hour in the heat, covered with a wet cloth.
A rising completed, divide the dough into a dozen balls (= future pizzas;), place on a baking sheet lined with waxed paper and crush the middle to give the right shape.
At this point, I would say .. forgive me .. you can pick any Sigrid a bit 'to cover with one that offers your fridge and you suggest that your tastes!
In the original version was not provided for the cheese .. I in fact on a few, as well as tomato, capers and olives, I put it, transforming it from a muffin pizza, even on someone else's a little ham, and I must say that the result was excellent! short, a little 'something for everyone ... (but the best are those with the onion!) Once assembled, a drizzle of olive oil and a pinch of salt on each.
Bake for about 15 minutes at 220 ° C and immediately remove them from the pan. A little more 'is a hot story ... enjoy!
